Noma Served Garlic Fruit Leather and Moss at NYC Pop-Up

The New York dinners from acclaimed foraging destination Noma were invite-only, private affairs, but a look from some Instagrammers shows a peek of what concoctions the Copenhagen fine dining restaurant cooked up — including moss in chocolate and cep mushroom and a leaf-shaped dish that was made of “oxidized garlic fruit leather.”

The meals were held at Spring Place, a members-only club in Tribeca, and although members of the club could pay $2,000-a-head for one event, other dinners were hosted by companies. On one night, Noma catered for the ten-year anniversary party for Kilian, a perfume company owned by cognac-heir Kilian Hennessy, and on another, they made a meal for the launch party of Hodinkee Magazine, which covers wristwatches.

Lucky attendees of the meals included Elle Decor editor-in-chief Whitney Robinson, who posted pictures of every course to his Instagram stories, and Mark Chou, a VP at luxury luggage company Away. It’s unclear whether they had to pay the $2,000 entrance fee for the meal.

As for that oxidized garlic fruit leather, Robinson said it “tasted like Michelin fruit roll ups.” Another attendee noted that a server said some of the black color came from crushed up ants, which supposedly gave it a citrus aftertaste.

Other dishes included sheep’s milk mousse, king crab and egg yolk, lobster with rose oil, langoustine with oyster emulsion, and a reindeer moss dish covered in chocolate. Noma has been named the world’s best restaurants several times, and its chef René Redzepi is considered a culinary word savant for his creative use of local ingredients. He opened a more public pop-up for the restaurant in Mexico earlier this year, a holdover as he prepares to relocate the flagship in Copenhagen with a new menu.
